The name Antillean originates from the beautiful islands of the Antilles, located in the Caribbean. The islands are rich in culture and express this through food, music and art.
The three founders of Antillean led by Patron Chef, Michael Hanbury, a well-travelled innovator, driven by his love of West Indian culture and Caribbean food. Michael began his culinary journey as a commis chef at London’s Sanderson Hotel, before joining celebrity favourite Asia de Cuba at St. Martin’s Lane Hotel, where he climbed the ladder to executive chef.
Culinary director and cofounder, Baziz Rachedi developed a reputation for product development using innovative techniques and a dynamic leadership style. Skills established during his illustrious career as executive sous chef for St Martin’s Lane Hotel.
Prior to joining Antillean, director of operations and cofounder, Chris Martin was instrumental in the development of the food and beverage aspects at Royal London House Hotel, home of the acclaimed Aviary rooftop restaurant and bar. Chris is a natural leader with a passion for developing positive working culture and has a wealth of experience managing large teams at several premium brands including Aqua London, Gaucho and Asia de Cuba.
